Apricot Cherry Surprise Scones

This recipe is adapted from Simply Scones by Leslie Weiner and Barbara Albright. I first tried their version almost ten years ago and was blown away by the apricot and white chocolate combination. After applying a few “savvy” changes, I’m still completely enamored with this duo, taking it to a new level in these [click headline for more — or photo in Facebook]

Triple Chocolate Chip Brownie Cookies

“Triple”—because of the cocoa, melted chocolate and chocolate chips; “brownie”—because of the texture; Triple Chocolate Chip Brownie Cookies—because sometimes a little chocolate just isn’t enough!

Adapted from a recipe published in Redbook magazine, this one contains half as much butter (proportionally) plus added whole grains and a touch of fruit.

Aunt Lois’s Über Chocolate Mocha Biscotti

My dad’s “baby” sister turned 70 this month, and my cousin threw an amazing surprise party for her. After asking about Aunt Lois’s preferences—coffee and chocolate over a citrus, cherry or nut combination—I created these to bring along for the big day.

Though not chewy or gooey like their namesake, brown sugar makes these a little [click headline for more — or photo in Facebook]

12:02 Mocha Muffins

Here’s another rendition of muffins featuring chocolate, coffee, whole grains and “disguised” fruit. This time I skipped the veggies and stuck with fruit that you’re more likely to have on hand. Since bananas and applesauce are sweet already, this recipe doesn’t require as much sugar as 12:01 Mocha Muffins, Chocolate Chip Pumpkin Muffins or [click headline for more — or photo in Facebook]

Cherry Almond Chocolate Chip Cookies

We’re fortunate to have access to dried cherries in bulk here in Michigan, and we take advantage of that on a regular basis, using them in everything from oatmeal to turkey stuffing. Since dried cherries go so well with almonds and with chocolate, it makes sense to bring all three together in one cookie.

Sweet Potato Coffee Cake

This coffee cake presents a fantastic way to “sneak” vegetables, fruit, fiber and whole grains into your day. Though tempting for breakfast, I recommend saving it for dessert or a special treat because of its sugar content.

If eaten while warm, you can serve this like my Cherry Almond Pull Aparts, and it will yield [click headline for more — or photo in Facebook]
