If you want a flavor combination like this one, homemade bagels are definitely worth the effort. Our cheese-stuffed Tender Tomato Rolls have been such a hit that Matt decided to try a similar pairing in bagels. Not surprisingly, they’re excellent. The first iteration of this dough was used for bagels, and it has since been formed into miniature cinnamon “snails” and raisin-stuffed loaves. My favorite variation—and that of our children—is this one. Loaded with apples, cinnamon and whole grains, these breakfast rolls are often requested at other times throughout the day.

Matt created this recipe by combining my Easy Cheese Brioche with his Hearty Pizza Bread. Such experiments often require multiple tests, but this time he hit a home run on the first attempt, creating an incredibly delicate roll that is excellent on its own but even better stuffed with cheese.
