Sourdough Deep Dish Pizza Dough

Adapted from Donna Rathmell German’s The Best Pizza Is Made at Home

Makes one 12-inch, two 6-inch, four 3-inch, or three 4-inch deep-dish pizzas

3/4 cup sourdough starter
1/2 cup lukewarm water
2 tablespoons olive oil
2 teaspoons sugar
1/2 teaspoon salt
1 cup whole wheat flour
2 cups bread flour
1 1/2 teaspoons instant or rapid yeast

Add all ingredients to your bread machine in the manufacturer’s recommended order, and run the dough cycle.

Coat pizza pan(s) with cooking spray.

Remove dough from machine, roll or press out into pan(s) for one 12-inch crust, two 6-inch crusts, four 3-inch crusts, or three 4-inch crusts. Cover and allow to rise for 30 minutes.

Prick the crust with a fork in several places and bake at 425° F for 5 minutes before adding toppings.

Cover with desired toppings and bake at 425° F for about 15 minutes, until crust is golden and cheese is melted or browned to your liking.
